Food safety and service conditions

A high-quality private experience begins before cooking. This document explains Casa Clelia’s controls and the conditions expected from the venue to protect diners, hosts and the working team.

1. Shared responsibilities

Casa Clelia is responsible for the planning, handling, personnel and equipment it expressly undertakes. The client or venue representative is responsible for accurate information, authorised access and the facilities, equipment or utensils they provide.

These conditions do not waive consumer rights or exclude liability legally attributable to either party.

2. Venue conditions

Before and on arrival, the working area must support preparation and service without avoidable risks. Requirements are adapted to homes, establishments, vessels and temporary venues.

  • Authorised access and an available venue representative.
  • Potable water, drainage, ventilation and adequate lighting.
  • Safe electricity, gas, cooking equipment and agreed appliances.
  • Working refrigeration and freezing with available capacity.
  • Stable, clean, washable surfaces away from contamination sources.
  • Clean, intact and sufficient tableware or utensils supplied by the venue.
  • Safe circulation without spills, cables, construction or obstacles.
  • Pets, pests, children and guests kept away from production, knives and heat.
  • Emergency provisions appropriate to the venue and event.

3. Casa Clelia commitments

Our procedures are based on Uruguay’s National Food Regulations and Ministry of Public Health guidance and are adjusted to the menu and actual risk.

  • Select suitable ingredients and check condition and expiry.
  • Maintain safe holding and serving temperatures.
  • Separate raw and cooked food and prevent cross-contact.
  • Use safe water and clean, sound utensils.
  • Clean and sanitise work surfaces and equipment.
  • Wash hands, use clean workwear and control hair.
  • Exclude handlers when symptoms, wounds or illness may compromise food safety.
  • Disclose substitutions, limitations or risks before service.
  • Document relevant checks and incidents.

4. Allergies, coeliac needs and intolerances

Preferences, intolerances, allergies and trace-avoidance requirements are treated differently. Information must be accurate, individual and available before the menu is closed.

A third-party or shared kitchen may contain allergens. Casa Clelia does not promise absolute absence of traces unless the venue, ingredients and equipment allow it to be demonstrated. Limits will be explained and an alternative may be offered or the affected preparation declined.

Higher-risk cases require human review. A food service does not replace medical advice.

5. Purchasing and traceability

When Casa Clelia purchases ingredients, it selects suitable products and records enough information to reconstruct origin and control.

  • Product and brand/presentation.
  • Supplier and branch where available.
  • Purchase or receipt date and time.
  • Related receipt.
  • Lot, expiry and origin when displayed.
  • Packaging condition and relevant temperature.
  • Substitutions, returns and incidents.

6. Team hygiene and fitness

The team uses clean clothing, aprons and utensils, controls hair, washes hands and follows conduct compatible with safe food handling.

Anyone with symptoms, food-transmissible illness or lesions that may compromise the process will not handle food and must report the condition so a safe measure or replacement can be arranged.

7. Client information

The organiser supplies final numbers, schedule, venue details, available equipment and relevant changes. Every adult provides their own restrictions privately; a responsible adult acts for a minor or dependent person.

A late or omitted allergy, guest-count change or essential venue change may require dishes to be adapted or withdrawn.

8. Right to adapt or stop unsafe work

A gas leak, loss of refrigeration, absence of potable water, pests, contamination, unsafe equipment or access, missing critical information or another uncontrolled risk may lead Casa Clelia to request correction, adapt the menu, remove a dish, pause work or decline the affected part.

The decision and reason are recorded. Commercial consequences follow the agreement and applicable mandatory rules.

9. Changes and incidents

Changes after final confirmation reopen the review of affected ingredients and allergens. In an emergency, assistance and the appropriate emergency services take priority.

Necessary incident facts are recorded privately for evaluation and improvement without unnecessary disclosure of health information.

10. Reading and confirmation

The initial checkbox records pre-contract reading. A confirmed booking requires renewed confirmation of the current version, venue checklist, menu, controls and declared restrictions.

Electronic acceptance is linked to version, language and time; it is not an absolute waiver of liability.
